Herb Whipped Ricotta Toasts with Tomatoes

Ingredients
  

  • t tbsp each fresh chopped herbs-rosemary, sage, basil, parsley, dill, ect.
  • 16 oz Ricotta Cheese
  • 2 tbsp Half and Half
  • 2 slices Fresh Bread-sourdough or baguette
  • 1.5 cups Freshly sliced tomatoes
  • 1 tbsp Olive Oil
  • 1 tbsp Pickled Onions

Instructions
 

  • Finely chop herbs and put in stand mixer
  • Add ricotta and half and half to mixer
  • Whip with whisk attachment for 1 minute until fluffy
  • Slice tomatoes into small pieces
  • Drizzles tomatoes with olive oil and salt and pepper to taste
  • Cut bread into thick slices (can toast bread if desired)
  • Top Bread with approx 1/4 cup ricotta mixture-spread evenly over bread
  • Top ricotta with tomatoes and pickled onions
  • Garnish with more salt/pepper and fresh herbs
