Herb Whipped Ricotta Toasts with Tomatoes

- t tbsp each fresh chopped herbs-rosemary, sage, basil, parsley, dill, ect.
- 16 oz Ricotta Cheese
- 2 tbsp Half and Half
- 2 slices Fresh Bread-sourdough or baguette
- 1.5 cups Freshly sliced tomatoes
- 1 tbsp Olive Oil
- 1 tbsp Pickled Onions
Finely chop herbs and put in stand mixer
Add ricotta and half and half to mixer
Whip with whisk attachment for 1 minute until fluffy
Slice tomatoes into small pieces
Drizzles tomatoes with olive oil and salt and pepper to taste
Cut bread into thick slices (can toast bread if desired)
Top Bread with approx 1/4 cup ricotta mixture-spread evenly over bread
Top ricotta with tomatoes and pickled onions
Garnish with more salt/pepper and fresh herbs
