Ingredients
  

  • 8-10 whole cooked, tail on jumbo shrimp
  • 1 cup cilantro lime rice
  • 1/4 cup mango pico de gallo
  • 1/4 cup black beans-rinsed
  • 2 tbsp fresh cilantro
  • 1/2 cup sweet BBQ sauce
  • Optional: sour cream to drizzle

Instructions
 

  • Toss shrimp in BBQ sauce
  • Cook rice according to package instructions
  • Put rice in the bottom of a dinner bowl
  • Layer on shrimp, mango pico, and black beans
  • Top with cilantro, lime wedge, and drizzle with sour cream.
